Why Do Chefs Use Diamond Kosher Salt?
Diamond Kosher salt has soft, square-like flakes that melt almost instantly into food. Have you ever oversalted a dish? I have! It’s because table salt is hard and round. It takes much longer to melt into foods, which makes us think the dish needs more salt. Another plus is Diamond salt does not have that iron-like taste because it is not iodized. This is why most chefs use and recommend this salt.
For those of you who prefer flourless sprouted bread, try toasted Ezekial bread. I have found that it’s a perfect substitute for artisan bread.
What Kind Of Bread Should You Use For Avocado Toast?
Think texture when making a dish! Avocados are creamy; tomatoes are medium soft and juicy. I use toasted artisan bread to add crunch and to even out these textures. The subtle depth of flavors that artisan multi grain bread offers will give another layer of depth to the taste of this dish. Artisan bread is denser and will hold up to the soft textures in avocado toast. Besides, who likes soggy bread? For those of you who prefer flourless sprouted bread, try toasted Ezekial bread. I find it’s a perfect substitute.
How To Pick Avocados
Pick an avocado that is heavy for its size and a little darker in color. It should be firm with a little “give.” The skin should be uniform without any dry veins. In the United States, the most common avocados are the California Hass, which is smaller and has pebbly skin and the Florida avocados, which are larger with smooth skin. Most of us prefer the Haas avocado because it is richer in taste and has a creamier texture.

- Cover unused avocados with plastic wrap. Make sure the plastic wrap is in contact with the surface of the avocado and there are no air bubbles. Air will eventually turn avocados a visibly unpleasant greyish brown.
