This recipe is one of my all-time favorites when it comes to side dishes. It compliments any meal. I can put it in the oven and forget about it until the timer goes off. The thinly sliced potatoes, layered with savory butter and baked in a cast iron skillet, come together to create a crispy, golden brown top that is simply irresistible. What kind of potatoes can I use?
You can substitute russets for Yukon Gold. I use Yukon Gold because I like the firm bite of the potatoes in this dish. Their golden color is visibly pleasing and adds a nice texture to the meal.

Best Potatoes Anna
Equipment
- 1 iron skillet,10 -inch
- 1 metal spatula
- 1 pastry brush
- 1 potato peeler
- 1` mandolin
Ingredients
- 4 large Yukon Gold potatoes (peeled and thinly sliced 1/16 inch)
- ½ teas onion powder
- ½ cup unsalted butter (melted)
- 2 tbsp olive oil
- salt and freshly ground black pepper
- fresh thyme leaves for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Brush a 10-inch (23 cm) cast iron skillet or baking dish with melted butter and olive oil.
- Arrange a layer of sliced potatoes in the bottom of the skillet, slightly overlapping each slice. Brush melted butter over the potato layer and sprinkle with salt and pepper.
- Repeat layering the potatoes and brushing with butter until all the potatoes have been used. Be sure to season each layer with salt and pepper.
- Cover the skillet with foil and bake in the oven for 45 minutes.
- Remove the foil and continue baking for another 20-25 minutes or until the top is golden brown and crispy.
- Remove from the oven and let the potatoes rest for 5-10 minutes before serving.
- Garnish with fresh thyme leaves if desired. Enjoy!
