It’s not summer unless someone in my family makes this Fresh Strawberry Pie recipe. It’s a simple yet delightful combination of flaky pie crust and fresh strawberries. I top it with delicate Creme Anglaise and whipped cream, this dessert is so easy to make and always turns out special.

What You Will Need

Fresh strawberries

Gelatin sheets

Sugar

Cornstarch

Hagen Daz Vanilla Bean Ice Cream

Whipped Cream

Recommended Kitchen Tools( Amazon)

Pyrex Pie Plate. This is a great pie plate, especially when par baking and blind baking pie crust.

Pastry Blender. How you want to cut fat into flour is a personal preference. I prefer to use my hands, but many cooks love this kitchen tool. Pastry blenders work great for pie crust, but it is not a tool for biscuits or rough puff pastry.

Make it Vegan

  • Use my Vegan Pie Crust Recipe
  • Substitute whipped cream with a whipped coconut cream.
  • I don’t know of a good substitute for vegan Ice Cream. Your suggestions are valuable to me. If anyone has some ideas, please leave a comment to let us know.

Ingredients  

One blind Baked 5 Minute Pie Crust Recipe

  • 2, 16 oz cartons of fresh strawberries
  • 1 cup water
  • 2 sheets sheets of gelatin
  • 1 cup sugar
  • 2 Tbsp cornstarch

Toppings

  • 1 pint Hagen Daz Vanilla Bean Ice cream (melt it in the microwave to make a quick Creme Anglaise)
  • whipped cream to taste

Instructions
 

  • Hull, wash, and pat dry strawberries
  • Cook one cup of strawberries with 2/3 cup of water until boiling.
  • Blend the remaining water, sugar, and cornstarch. Add mixture and gelatin sheets to the boiling strawberry mixture.Stir constantly until mixture is very thick. Let it cool completely. Stir constantly until mixture is very thick. Let it cool completely.
  • Arrange fresh strawberries in the baked pie shell.
  • Spoon cooked strawberry mixture evenly over pie. A silicone pastry brush will help smooth the mixture.
  • Cover and refrigerate for at least four hours.
  • Serve with a quick Creme Anglaise (melted Hagen Daz Vanilla Bean Ice Cream) and top with whipped cream. Enjoy!

Notes

 
TIP: To make a quick Creme Anglaise, melt a pint of Hagen Daz Vanilla Bean Ice Cream in the microwave. It has the same ingredients as the real thing. This tip came from one of our great American cooks, Ina Garten.
